Short answer: Interlock is two layers of jersey knitted together. It does not roll, gives less and is smooth on both sides.

How it is built

In interlock two rows of stitches lock into each other, so the fabric gets the same surface on both faces. That makes it twice as thick as single jersey with the same yarn and considerably more stable.
